That’s right, we’re shaking things up with unique ideas for cookies and desserts. Try one of these cookie dessert recipes for your next gathering or family treat!
One-Bite Ice Cream Cookie Sandwiches
Let’s start with a simple, tasty dessert: Cookie Square mini ice cream sandwiches! Great for birthdays, dinner parties or a fun everyday after-dinner treat.
Ingredients:
- Cookie Squares
- Your favorite ice cream - anything goes!
Directions:
- Prep by sitting ice cream out to soften for 10 minutes.
- Arrange cookies on a plate or serving platter
- Scoop around 1 Tablespoon of ice cream onto each cookie, then top with another cookie
- Repeat - and stick them in the freezer until ready to serve your cookie dessert!
Homemade Cookie Butter
No need for store-bought cookie butter when you have your own cookie butter dessert recipe. It doesn’t take long and can be eaten right out of your jar, on bread or spread right back on more shortbread cookies!
Ingredients:
- 2 cups finely crushed/blended Michel & Augustin shortbread cookies
- ½ cup sweetened condensed milk
- ¼ cup evaporated milk
- ¼ cup (or ½ stick) butter
Directions:
- Finely crush cookies for this dessert and place them into a bowl. We recommend using a food processor
- Heat the butter over low heat in a small saucepan. Once melted, stir in condensed milk and evaporated milk until combined
- Slowly add your liquid mixture to the bowl of crushed cookies, mixing with a spoon as you go. Continue pouring the mixture until your cookie butter is wet enough to stay together or until you reach your desired consistency
- Transfer to a glass jar and allow to cool for 1 to 2 hours
- Optional: for a smoother butter, add water (¼ to ½ teaspoons at a time) to your cookie butter, stirring vigorously until completely combined
This cookie dessert recipe will last around 1 week in the refrigerator – if you can make it last that long!
Shortbread Cookie Cheesecake
If you’ve avoided making your own cheesecake because it seems too difficult, we’re here to make things a little easier for you. How, you ask? With a two-ingredient cookie crust dessert recipe! The cookie crumb crust also works well with other cookies and desserts, from pies to cheesecakes. Oui oui!
Ingredients:
- 1 ¾ cup original shortbread cookies, finely crushed
- 4-5 Tablespoons Butter, melted
- 3 8 oz. packages of Cream Cheese (about 3 cups), softened
- 1 cup Sugar
- 1 cup Sour Cream
- ¼ cup All-Purpose Flour
- 2 teaspoons Vanilla Extract
- ¼ teaspoon Salt
- 3 Large Eggs, lightly beaten
- Extra cookies (about 2 cups), crumbled
- Optional: fruit or chocolate sauce to top
Directions:
- Make cookie crust and prep dessert: lightly grease a 9-inch pan, then mix the crushed shortbread cookies and butter until thoroughly combined in a large bowl. Gently press into the bottom and up the sides (about 1 inch) of the pan
- In another large bowl, beat your cream cheese and sugar together until smooth, then add sour cream, flour, salt and vanilla
- Add in eggs until just combined, then fold in about ¾ cup of your cookies
- Pour the mixture into your crust, then top with the remaining cookies
- Place on a baking sheet and bake at 325°F for around 60 to 65 minutes, or until the center is set
- Cool on a wire rack for 15 minutes, then loosen the crust using a knife before cooling again for 1 hour
- Once cool, refrigerate for 4 hours or overnight before slicing and enjoying your cookie dessert. Top with fruit or sauce, if desired
