Chocolate Mousse

A soft, foamy indulgent dessert with only 4 ingredients: it's our chocolate mousse! It will take you about 25min to prepare but note you'll have to keep it in the fridge for at least 3 hours before serving.

INGREDIENTS
  • 180 g (6 oz ) dark chocolate (70% cacao or more)
  • 80 g (1/2 cup) granulated sugar
  • 240 g (8 oz ) egg whites (from 8 large eggs)
  • 80 g (3 oz ) egg yolks (from 4 large eggs)
  • 100 g  (8 Tbsp)  cold butter

 

TOOLS

1 saucepan, 2 mixing bowls, 1 wooden spoon, 1 hand mixer, 1 rubber spatula, plastic wrap

 

STEPS

1. MELT your chocolate in a bowl.

 Note: Two melting methods have been approved by the tribe: bain-marie OR 10 seconds at a time in the microwave, stirring between each interval.

2. Gently ADD YOUR BUTTER, cut into pieces. Mix it with the chocolate until shiny and smooth.

3. REMOVE FROM HEAT.

4. ADD YOUR EGG YOLKS and mix vigorously with a wooden spoon in a small, circular motion.

5. BEAT THE WHITES into stiff peaks, adding the sugar halfway through. They must be very firm. Try turning the bowl upside down. The whites don’t move ? Perfect. They’re ready.

6. POUR THE CHOCOLATE into the beaten egg whites and mix gently from the center out with your rubber spatula. 

Note: It’s important not to mix too vigorously - you want to keep as much air as possible in your mousse to make it light and fluffy.

7. Cover and CHILL for 7 hours.
